LOVE OUT LOUD

So on Valentine’s Day, 2010, I woke up slowly and spent some thoughtful moments in bed. My husband had gone to work and I was alone. Eventually, I scampered into the kitchen for coffee, a ‘heart-shaped’ cupcake, and the newspaper. I crawled back into bed and had an early morning Valentine’s Day party just for me. And yes, I ate that little cupcake without guilt and it was yummy!
Once my party was over I wondered to myself, “What can I do to make this Valentine’s Day memorable?” My mind started clicking and suddenly I scrambled out of bed, motored around the house, cleaning things up a bit. I set our table for two, making it extra special for the occasion. Once the ‘stage’ for dining was set, I went into the storage closet under our stairs and there it was: the box in which I had been storing my wedding dress for 22 ½ years. It was heavier than I remember as I lugged it through the doorway. I stopped for just a moment, being sure this is what I wanted to do. I asked myself, “Why have I been storing this?” “For what have I been saving it?” It cost so much money and I had only worn it once. I have a son, and no daughter. Surely my son won’t want to wear this lovely dress on his wedding day. So I decided that very moment, I’m going to open up this box and look at my wedding dress, the dress I haven’t laid my eyes upon for so long.
I began opening the box carefully at first and before I knew it, I was tearing into it….there was a first box, then a second one, and finally, I got to the third box within….a lovely gold box in which laid my wedding dress. I carefully took it out and held it up. It was just as beautiful as I remember but the waist looked so SMALL! It was then I thought, “Maybe I won’t be able to pull this off after all…it’s going to be way too small.” I stepped into it carefully and YIPEE! I was in! Of course it didn’t button all the way up, but I could wear it, at least for awhile!
So my plan came together. I prepped some things for dinner, took a bubble bath, and just before my husband was to arrive home, I ‘prettied’ myself up and put on my wedding dress and some sparkly jewelry, giggling to my self all the while.
Although I had to sit around in the dress for awhile before my husband arrived home, it was fun. I felt like a princess for those 45 minutes of waiting, those minutes of anticipating his reaction. As he pulled into the driveway, I opened the front door and positioned myself in the doorway, smiling and giggling. He got out of the car with a look of surprise on his face, his entire being consumed with laughter! Just the response for which I had hoped. His arms were filled with flowers and chocolates. After putting those things aside, he twirled me around and we danced a little dance with the same endearing affection as we had on our wedding day some 22 years ago.
We had a fun-filled evening! One that was fueled by spontaneity; one we’ll long remember. |

Throw Away The Book

Overcoming peer pressure is one thing I’ve enjoyed about aging. I used to think I had to ‘live by the book’…..by whose book, I’m not sure, but I’ve tossed it aside! Now I live life capriciously. I’ve finally realized I’m a unique being and I’m happiest when I’m ‘dancing to the beat of my own heart.” I no longer care how others perceive me, so I follow my own heart and participate in life my own lively way.
For years, so many doors remained closed…locked up tight, because I was afraid to peek through the keyholes to see what lay beyond. I suppose my insecurities and peer pressures held me back, but no longer! I’ve cast away those restraints and a whole new world has appeared. A world I explore and enjoy on a daily basis. Yes, I’m carefree, spontaneous, and curious. When something sparks my interest, I go for it! I check it out! The end result, finally….at last: I am the guiding force in my life; I control the influences; I weigh the options; I make the choices; I live with enthusiasm and sooo love the ‘heart tickle’ I feel as I begin each new day.
I consider each new sparkly day as another opportunity to express myself. Opportunities to enthrall, charm, or fascinate others in some original or crazy kind of ‘jen’ way! I love participating and precipitating the fun of living life.
So, maybe today, I’ll paint my front door bright yellow (the color of happiness) so all that enter will have great fun;
And maybe, I’ll walk in the neighborhood, i-pod and sneakers on, and do a couple of dance steps along the way and sing loudly out of tune as I walk, giving my neighbors something to smile about;
Maybe, I’ll wear mismatched shoes to the grocery store to see if anyone notices, and if they do, we’ll laugh together;
And later today, maybe I’ll ‘press 2’ for ‘Spanish’, just for giggles;
And maybe, I’ll place a ‘rock in a box’ and mail it to a friend with a note attached saying ‘YOU ROCK’!! …. Because she really does!
Maybe I’ll go out for lunch today and pay for some unsuspecting stranger’s meal, and do so anonymously.
I’ll continue to create and accumulate some precious memory making moments, some sweet and simple moments I’ll treasure for a lifetime.
So today, why not 'throw away the book'.... ‘think outside the box’ and maybe your life will ‘ROCK’ just a little bit more! |

My New Year: 2010
Rewind/Repeart...More 'n Less???

Ah, the New Year has arrived! What, I wonder, will 2010 bring? As I ponder this brand new year, I’ve decided to continue my battle with the many vices I have acquired over time. For me, it’s going to be a kind of ‘rewind/repeat’ year of resolutions from the past. Many are the same I’ve failed to completely conquer in previous years….exercise more, eat less, lose some poundage I’ve added to the sum total during the past two months. It’s a constant daily struggle, but one battle I’ll continue!
Eat less sweets…I’m already ‘sweet’ so why do I still want chocolate? Must be a girlie thing??? I’ll re-alphabetize my spices and hope these little jars don’t relocate themselves without my knowledge. And, Yes! Flossing daily is on my list of accomplishments and wearing my retainer needs to become a more frequent habit. Pull more weeds? Nah! But I will drink more water and give my plants more, too. I’ll take more bubble baths and light more candles, more often! I’ll pedal my bicycle around the neighborhood more and okay! I’ll no longer avoid the hills! My hair has aged right along with the rest of me so I’ll grapple with the gray a little bit better this year.
MORE is what most of my resolutions will entail: to laugh more, love more, live more, and listen more; be at the ocean more, read more, share family time more, and tickle funny bones more!
I’ll live in the moment more, indulge more, be zany more, and a little crazy more. I’ll find silly but creative ways to express myself more! If I’m ‘bananas’ about someone, I’ll send a box full of bananas to tell them so! (I did this to my husband when we were dating, and he married me anyway!) I’ll send my really special ‘girlfriends’ huge boxes of ‘nuts’ to remind them, ‘I’m just nuts about them and our friendship’! I’ll embrace each new moment more, notice the details more, and perhaps ‘linger in the moment’ just a wee- bit more. I’ll be thoughtful more, thankful more, do the unexpected more, and live in the sunshine more!
LESS will also encompass a great degree of latitude in resolving some of my annoying habits. I’ll begin by eating less, (thus, weighing less:); I’ll shop less, buy less, and spend less; I’ll watch television less, frown less, waste time less, and complain about ‘tailgating troglodytes’ less; I’ll lecture my son less, worry about dust bunnies less, and I’ll think ‘something is impossible’ less. I’ll drive thru for a ‘frosty’ less, write notes on the bathroom mirror less, and one last resolution for my husband and son, I’ll say ‘yipee’ less! :)
I’m going to take care of all this business, one day at a time. If I fail completely today, I’ll start over tomorrow. That is, after all, why time was created…to begin anew with each brand new day? Whether the goal is a new one, or an old familiar tired one, I’ll try again and again until my mission is accomplished…or not~ the key to all this resolution making, for me, is ‘to keep on keeping on’! If I ‘keep it simple’ then maybe I have a chance at success.

BUCKHANNON~MY HOME

I was born in Buckhannon, WV, the very town where my parents grew up. It was my Father who referred to Buckhannon as a mountain top retreat. A refuge; a place to
enjoy solitude; a place he found solace and comfort in the midst of family and friends. A town tucked into the mountains, so majestic with mystery; a place to be at one
with nature. His passion for this small lovely town floods my soul with the same energy as I stroll down the same sidewalks he roamed as a child. I am calmed by the large maples looming over the streets. Sidewalks I spent hours playing hop-scotch, jumping rope, roller skating, and bicycling. A town so quaint and steeped in history, a place I still call home.
With each return visit to Buckhannon, the fresh crisp mountain air floods my consciousness with a pleasure so pure, my senses come alive and memories of yesterday rush through my mind. As a child, I remember catching fire flies just after sunset on warm summer evenings. I'd place them into a jar that lit my room at night and I remember the joy of releasing them to freedom the very next morning. I remember the free floating feelings of tubing, rafting, swimming, and canoeing in nearby rivers, the same rivers my parents also spent endless hours; the cool summer nights when friends gathered around bonfires singing to the gentle rhythm of a guitar and I am warmed by the memories of the fun and laughter that filled the night air.
My Father was proud being a native son of Buckhannon, a place that was a rapturous and definitive place for him to grow up. My Mother, also homegrown in Buckhannon, experienced tragedy in her early life, losing her Mother just after birth and her Father at the tender age of 12. She endured without bitterness and lived life in a chipper, cheery fashion. She, too, spent hours roller skating the shaded sidewalks, and told me stories of how she, as a child, would play 'dress-up' and parade up and down the street wearing Aunt Billie's high heel shoes.
My Mother grew into a graceful and devoted wife and mother. She wore no make-up, and no jewels adorned her fingers. She wore her wedding band of gold and played with us in the yard in shorts and bare feet. She allowed us to horseplay or to simply sit under a tree reading. Moma was solicitous and protected us from all the harsh realities of the world. Life and growing up in Buckhannon was idyllic...a life filled with magical charm.
At first glance, you may not notice anything special about Buckhannon. The skyline is understated, maybe non-existent, but the Court House rotonda is the first thing you see as you approach Buckhannon from the surrounding hillsides. It's lovely and is the first glimpse of charm as you come into town.
The heartbeat of Buckhannon pulsates at a slower pace than most other places on Earth, but that's how the natives like it. Life is slow there; nobody's in a hurry; neighbors help neighbors; people make time for one another. Buckhannon has its own unique fingerprint in this world, and all who inhabit this lovely, laid back mountain town are unique by nature. They have collectively created a warm and welcoming ambience and a genuine kindness runs through the veins of all who live there. I'm so grateful to have been born into a family of Buckhannon natives and to have lived most of my life in Buckhannon, the place I call home.

| Crazy for Cranberries |

My family is crazy for cranberries! During the Christmas season I try to incorporate cranberries into a variety of dishes. Below are just a few very simple recipes that include cranberries. We begin our day with Cranberry Mini Muffins and coffee. The Cranberry and Avocado Green Salad is a great way to begin Christmas dinner, while Cranberry Sauce and Frozen Cranberry Salad make for simple side dishes. My husband usually requests Cranberry Raisin Pie for dessert, and let me tell you, it’s so simple to prepare! I’m just passing on some ‘simplicity’ from my kitchen to yours during this busy time of year. Merry Christmas to you!
Cranberry Mini Muffins
Preheat the oven at 400 degrees, and lightly grease muffin pan.
Combine the following ingredients into a large bowl and mix well:
2 cups self-rising flour
1 - 8 ounce container sour cream
1 cup melted butter
1 teaspoon grated orange rind
1 Tablespoon orange juice
Add, 5 ounces dried cranberries
Spoon this mixture into each section of the muffin pan.
Combine ¼ cup of sugar with ¼ teaspoon ground cinnamon, and sprinkle this over the muffin mixture. Bake for 19-20 minutes, until muffins are golden.
Eat and enjoy!
Mixed Greens with Cranberries and Avocado
Begin with a bowl full of mixed baby greens.
Add 2 ripe avocados, coarsely chopped, and ¾ cup of dried cranberries. Toss in 1 cup of toasted walnuts. Toss the salad with champagne vinaigrette, blush wine vinaigrette, or the vinaigrette of your choice. Eat and enjoy!
Cranberry Sauce
Combine the following ingredients into a sauce pan:
1 cup sugar
1 cup orange juice
3 cups or 1 bag of fresh cranberries
Cook over medium heat until thickened. Remove from heat, cool, and pour into serving dish. Cover tightly and chill. Serve and enjoy!
Frozen Cranberry Salad
Combine the following ingredients in a large bowl and mix well:
2 - three ounce blocks of cream cheese
2 Tablespoons sugar
2 Tablespoons mayonnaise
1 - 16 ounce can of whole berry cranberry sauce
1 - 8 ounce can of crushed pineapple, drained well
½ cup toasted pecans, finely chopped
Fold in one container of Cool Whip
Pour the mixture into an 8 inch square dish, cover tightly and freeze. Remove from freezer 30 minutes before serving.
Cranberry Raisin Pie
Preheat oven to 375 degrees. Line a 9” pie plate with pie pastry.
Combine the following ingredients into a sauce pan and cook over medium heat until thickened:
4+ cups fresh cranberries
2 cups raisins
1 cup sugar
1 heaping Tablespoon flour
1 cup cold water
Remove from heat, cool slightly and add 1 teaspoon vanilla. Pour the cranberry mixture into the prepared pie plate, and top with a second pie crust. Crimp the edges, cut vents in the top crust and sprinkle with a bit of granulated sugar. Bake for about 30 minutes, until crust is golden. Cool on a wire rack. |

Nibbling Nosh and No-Fuss Nips

Entertaining an entourage of family and friends during the Christmas season could well be compared to conducting an orchestra in your kitchen. You could rattle around pots and pans and an abundance of cookware to compose your harmonious mingling of fare, but your only reward would be a sink full of dirty dishes and extreme exhaustion before guests arrive.
Let me introduce you to some simple and scrupmtious "Yuletide Yummies" that require 'no fuss-no muss'. The simple 'nosh' I'm about to share with you are finger foods, no forks required. They present a sophisticated and delightful presentation, but alleviate stress during the pre-party preparations. Now it's time for me to introduce you to a few 'solo acts' of my own.
Fig and Manchego Bites
Small slices of Pumpernickel Bread
Fig Preserves
Manchego cheese, small slices (asiago cheese is a good substitute)
Add a dollop of fig preserves onto each piece of bread and top with a slice of manchego cheese.
Cucumber and Shrimp
Slices of English Cucumber
Goat cheese (feta or cream cheese are good substitutes)
Cooked or grilled shrimp, deveined and peeled
Spread goat cheese onto each slice of cucumber. Top each cucumber slice with one shrimp. (For ease of preparation, have your grocer steam the shrimp for you!)
Place onto a platter, cover, refrigerate until ready to serve.
Red Pepper and Boursin
1 can Roasted Red Piquillo Peppers, drain, rinse, dry
Boursin cheese (or garlic cheese spread)
Slice peppers in half. Spread a bit of boursin onto each pepper and place onto a baking sheet. Broil for a few minutes, until boursin is softened and slightly brown.
Endive and Crab Dip
Endive leaves, clean and dry
Cajun Crab Dip (from your local grocer)
Frozen baby peas, thawed
Fill each endive leaf with crab dip. Garnish each with a couple of baby peas. Place onto serving platter, cover, refrigerate until ready to serve.
Chicken Salad stuffed Celery
Celery stalks, clean, dry, remove strings, cut into 2-3" pieces
Chicken Salad (from your local grocer)
Dried Cranberries
Fill each stalk of celery with chickn salad and top with a couple of cranberries. Place onto a serving platter, cover, refrigerate until ready to serve.
Prosciutto and Asparagus
Stalks of asparagus, wash, remove tough ends, and blanche
Prosciutto, thinly sliced
Wrap prosciutto around each piece of asparagus. Place onto serving platter, cover, refrigerate until ready to serve.
Broccoli and Turkey Roll-Ups
Broccoli crowns, wash, blanche, and separate spears
Smoked Turkey, thinly sliced
1/4 cup sour cream
1 Tablespoon of mayonnaise
1 generous teaspoon Dijon mustard
Combine the sour cream, mayonnaise, and mustard. Spread this mixture lightly onto each 2" strip of turkey. Wrap each broccoli spear with a strip of turkey. Place on serving platter, cover, refrigerate until ready to serve.
Lasagna Noodle Roll-Ups
6 Lasagna noodles, cooked according to package directions, rinse, pat dry, and cool
1/2 cup prepared guacamole
1/2 cup salsa
1/2 cup shredded cheddar cheese (or cheese of choice)
Spread 1-2 tablespoons of guacamole onto each noodle, followed by a layer of salsa and a layer of cheese. Roll up the noodles and cut each in half to form two equal size servings. Place onto platter, cover, and refrigerate for up to 3 hours before serving.
Spaghetti Sauce and Goat Cheese
Spaghetti sauce (from the grocer or homemade)
Log of goat cheese
Pour the desired amount of spaghetti sauce into a microwave safe dish and cook until hot. Pour the sauce into a serving dish, placing the log of goat cheese in the middle of the sauce. Serve warm with crusty bread, crackers, or raw vegetables. This one goes fast!!
Roasted Red Pepper Dip with Veggie
1 12 oz. jar of roasted red peppers, drained
1 cup sour cream
1 8 oz. block of cream cheese
2-4 cloves of garlic, minced (you determine the amount of garlic to add)
Place the above ingredients into a food processor and blend until smooth. Place the dip into a serving dish, cover, refrigerate until ready to serve. Serve with fresh raw veggies, such as baby carrots, celery sticks, cauliflower, and cucumber.
Cheese and Meat Platter
Arrange a variety of cheeses onto a platter. Some good choices may include gouda, brie, sharp cheddar, asiago, Parmigiano-Reggiano, goat, and blue cheese. Add chunks or slices of salami, dried sausage, or pepperoni to the platter. To make the platter more interesting, cut the offerings into a variety of shapes; wedges, chunks,rolls,rounds, etc. Add clumps of red and green grapes for festive color. Cover and refrigerate until ready to serve. Serve with bread and crackers.
Mini Chocolate Fillo Shells
Mini Fillo Shells (found in the freezer section of your grocer)
Small containers of prepared fat free, sugar free Chocolate Pudding (or flavor of choice)
Cool Whip
Maraschino Cherries
Fill each fillo shell with chocolate pudding followed by a dollop of cool whip. Top with a maraschino cherry. Best if prepared just before guests arrive.
Marshmallow Popcorn Bars
2+ Tablespoons unsalted butter
1 3.5 ounce package of 'plain' microwave Popcorn
1 10 ounce bag of mini marshmallows
Butter a 9x13 inch baking dish. Pop the popcorn according to package directions. In a large saucepan, over medium-low heat, melt 2 tablespoons of butter and the marshmallows. (5+ minutes) Fold the popcorn into the marshmallow mixture until well coated. Press into the prepared baking dish and let sit for 10 minutes before cutting into bars. For Christmas, feel free to add a sprinkling of red and/or green crystal sugars for a festive look.
Raspberry Linzer Tart
18 oz. roll of refrigerated sugar cookie dough
1/2 cup finely chopped almonds
2 Tablespoons all-purpose flour
1/4 teaspoon cinnamon
1/2 teaspoon almond extract
2/3 cup seedless Raspberry Preserves
Preheat oven to 350 degrees. Gently grease a 9' spring form pan (or a 9' pan/dish of your choice)
Crumble the cookie dough into a large bowl. Let it soften for about 10 minutes. Sprinkle the almonds, flour, cinnamon, and almond extract over the dough and mix well. Reserve 1 cup of the dough mixture. Press the remaining dough onto the bottom of the prepared pan. Spoon and spread the preserves over the dough. Crumble the reserved dough over the preserves. Bake for 25-28 minutes, until topping is golden brown. Cool in pan on wire rack for 10 minutes. Cut into wedges or squares and serve warm or at room temperature.

The 'nibbling nosh' recipes I've shared with your are smart, delicious, and simple solutions your guests will enjoy, allowing you to pull off a flawless performance from your kitchen. Simple Supper

Yesterday I spent my time reading. Once I finished one 'scary' book, I had neither the time nor the inclination to go grocery shopping. So, I decided to make a simple soup and a simple salad for one satisfying autumn supper. Because of the simplicity of this meal, I'm sharing my recipes with you. Enjoy!
Simple Chicken Soup
Place 8 cups (more or less) chicken broth in a large pan and bring to a boil.
To the broth, add the following: 1/3 - 1/2 cup diced carrots
1/3 - 1/2 cup frozen peas
2 celery stalks, diced
1/2 -1 medium yellow onion, chopped
Bring to a boil and cook for 5-10 minutes.
Add 2 cups (more or less) shredded baked chicken, reduce heat, and simmer until the vegetables are tender.
Add salt and pepper to taste, serve and enjoy.
Simple Salad
Fill each single salad serving dish with a generous amount of greens that have been washed and spun dry. I used baby greens.
To each dish of greens add the following: 4 or 5 pitted olives
3 or 4 pepperoncini's
a sprinkling of chopped red onion (optional)
several pieces of shaved parmesan or asiago cheese
Serve the salad with your favorite Italian vinaigrette on the side.
Here's a quick and easy vinaigrette that pairs well with this salad:
Whisk together 4 teaspoons red wine vinegar and 1 teaspoon of Dijon mustard. Slowly whisk in 4 Tablespoons extra-virgin olive oil, until fully incorporated.
For a larger crowd, you may double this vinaigrette recipe. |

Holding Hands with Hugo

When the New Orleans Hornets were the "Charlotte Hornets", we had easy access to tickets. At the end of each season, the Hornets celebrated their fans. This day of
celebration usually occurred during the last home game of the regular season. Free t-shirts were given to fans as the arrived at the coliseum. Between quarters and
during time-outs there were activities that included fan participation. Fans were selected at random and won 'give aways' for their participation. Activities varied in levels
of difficulty. For example, two people were chosen to shoot free throws, the fan making the most shots won a prize. Or, two fans were chosen to ride tricycles from one end of the court to the finish line at the opposite end of the court, the winner being the one who arrived first. Fans throughout the coliseum cheered for their favorites! I
must say, those responsible for dreaming up these activities were quite creative.
In April, 1997, I took my son and nephew to the FAN-tastic Finale, the celebration of fans for that season. We arrived early so the boys would have the opportunity to get some autographs. I was in my seat 'people-watching' as the sweetest young lady approached me and asked if I'd like to participate in a 'fan activity' during the first time
out of the game. She told me all I had to do was throw some balls into a kiddie pool and the prize for the winner would be a 'Sea Doo'. Well, we had just moved from a
lake and I had no need or desire for a Sea Doo, but when I glanced at my son, I saw an expression of excitement, exuberance etched all over his sweet face. So I
said, "Sure! It sounds like fun!" After all, I was sort of athletic; could throw a baseball better than most 'girls'; and besides, I was wearing my Nike's so I'd 'just do it'!!!!
I followed the young lady down the steps toward the court, signed the necessary paperwork, and waited with my 'competitor', a fit 20 something year old guy....I saw the writing on the wall!!! As the ballgame began, the same sweet young lady came over to us, carrying two 'HUGE' diving masks, and two pairs of really, really looooong diving fins, and said, "OOOPS! I forgot to tell you; you need to wear these!":) I thought "YIKES! There go my Nike's! I put the diving paraphernalia on, laughing all the while, as the buzzer sounded for the first time out~the moment of my 'debut'....my first steps onto an NBA court! It was exhilarating! I must tell you the 'fins' stuck to the court, so I had to lift my feet quite high with each step~I'm sure THAT was pretty! I finally arrived to my 'stash' of balls and much to my surprise, they were 16' inflatable beach balls!
The 'start' whistle blew and I began throwing and tossing beach balls toward my kiddie pool. Most were 'air balls' going 2 or 3 feet, and the pool was a good 20 feet away!
I might have gotten three balls into the pool, I'm not sure, as I was overcome with a fit of giggles. It was SO FUN ~ and I was SO HORRIBLE! At that point I was grateful
for that huge mask on my face! Needless to say, my competitor had a pool FILLED with balls, while mine was practically empty. I'm quite sure most of the fans in the coliseum were rooting for my competitor, but without a doubt, I was providing more entertainment and laughter for the crowd!
With the competition over, I was having some difficulty 'walking in fins' while leaving the court, but "HUGO', the Hornet's mascot, took me by the hand offering me much needed assistance. Because it was Fan Day, I, too, won a Sea Doo! My son was happy and proud of my 'ham-like' performance. One great FUN memory I'll
always share with my son and nephew! :)

Some 'meet cute' Moments

I'm working on a project and am collecting "meet cute" moments from around the globe. What is a 'meet cute'?, you ask me. I first heard the term in 'The Holiday', a most delightful and one of my favorite movies of all time. Anyway, a 'meet cute' is a most memorable meeting between two people, (or perhaps more). It would be a memorable first meeting. It could be funny, but it would be a moment that percipitates interminable intrigue. Below are different scenarios of some 'meet cute' moments.
My sister, some friends, and I went into 'The BeeHive' one night during our college years. A guy walked up to my sister and said, "Hi! What's your name?" She said, "Hi! My name's Paty." "Ugh!", he said, "That's an awful name! Why don't you change it?" While being an 'immature' 'meet cute', it was memorable nonetheless.
My family moved to Buckhannon a few days before my senior year of high school. Besides cousins, I knew nobody. My parents thought I should ride the bus to school for a while so I could meet some new people. For the first two weeks of my senior year, I walked to the corner of Kanawha and Park each morning and waited for the bus. Sometimes there was a girl who would usually be running to catch the bus. Sometimes she made it, other times she had to run two blocks in the other direction and catch the bus at the Academy School. I didn't know her but a whirlwind of energy surrounded her no matter where she got onto the bus. After two weeks of riding the bus, I began driving to school. That first morning I was driving up Park Street, the bus was pulling away from the curb, and the girl was running to catch it. I stopped and asked her if she wanted a ride to school. She said 'Yes!", so she and all that energy got into my car and she said "Hi! I'm Denise." From that day on, I picked Denise up at her house and we rode to school together. To this day, we are the best of friends! :)
Back in the early 1980's I was driving in my cute little VW convertible, top down. Traffic was stopped, a long line forming behind me. From my rear-view mirror I noticed a motorcycle 'weaving and bobbing' its way past all the 'stopped' cars until he was suddenly beside me in my cute little 'bug'! He said, "Hi! I'm Jack. I'm glad I caught up with you. Do you wanna get away?" At that point, traffic moved on and I never saw 'Jack' again!
And finally, my most memorable and most 'romantic' meet cute of all. It was September, 1980. I was vacating on Long Beach, Oak Island, NC with Moma and my favorite Aunt Jane! It was the week after Labor Day. The beach was desserted, so it seemed, and we spent that particular day reading and relaxing on the beach. Because my favorite moments on the beach are those hours before sunset, I put on my sweat pants and went for a 'barefoot' run on the beach. When I returned to our cottage, I sat down on the sand, mesmerized by the beauty that surrounded me. Seeming to appear out of nowhere, a most fit and fabulous guy came running along the beach. He smiled the whitest of smiles and said "Hello" as he ran past me. I responded with the sweetest " hello" I could summon, for the sight of him left me suddenly breathless. Little by little this gorgeous creature slowed his pace and came to a stop at the oceans' edge. Watching him in what I hoped was a 'non-chalant' manner, I noticed he was 'writing in the sand'! He proceeded jogging for a short distance, stopped, wrote in the sand, and jogged on for another short distance, stopped, wrote in the sand. Well, needless to say, I 'took the bait' ... my curiosity piqued. I got to my feet and sauntered down to the water's edge and read what was written: "Hi! I'm Johnny." So I continued walking along the shore, reading each notation made by this most interesting sand scribbling scribe. "What's your name?" "I'm from Virginia." "Where are you from?" And so on we went, one scribbling, the other reading. This went on for about half a mile when "Johnny" left the beach, going into a cottage, as I read the last notation: "If you want a beer, have a seat here...X. Well, I sat right down on the 'x' marking the spot, and true to his word, Johnny re-appeared on the beach with two 'miller pony' beers. As he sat down beside me, I looked at him and said, "Hi! I'm Jennifer, and I'm from West Virginia".....and that's all I'm going to share with you about my favorite 'meet cute' moment! :)

Golf Class

I loved taking summer courses during my college years. The professors were more relaxed, the classes smaller. One summer I decided to take 'golf' to fulfill one of my P.E. requirements. Being somewhat athletic, I thought it would be an easy A. This happened to be one class I took with my friend, Denise, as we were pursuing different majors. We signed up for the class taught by Coach Johnny Myers, a most kind and patient man.
We had some classroom lectures before heading outside to one of the practice fields on campus. I remember how wonderful it was being out in the fresh morning air, the sun peeking between clouds, a soft breeze blowing. We were to spend most of our class time outside, hitting balls under the tutelage of Coach Myers. He decided to video each student that first day, so he could critique each of us with a 'show and tell' the following day of class. He thought it would be beneficial so he could explain and show us where improvment was needed. He would do the same at the end of the course so we could observe our improvment.
That first day, most of us remained outside with Coach Myers, but Denise and one other girl were instructed to go indoors to a practice net with the student assistant we called "Obie". I did okay.
Show and Tell was the next day. Coach Myers went through the video, stopping and starting it as he told each student how he or she could improve their waggle, stance, swing, and follow through. Suddenly I appeared on the video and the only thing I remember Coach saying about me was my swing was a bit feminine. All in all, I did okay. A few students later, Denise shows up on the video. She waggles, gets in her stance, swings the club and misses the ball. Then she swings and misses again and swings and misses again, swings and misses, (and we're all giggling) as she swings and misses again and again and again.....maybe 18 times??? I don't recall but what we all remember is Denise finally picking up that golf ball and throwing it into the distance! At that point, even Coach Myers was laughing!
Needless to say, golf is not one of Denise's hobbies or pastimes. As for me, golf is a great Father-Son outing at our house.

Summertime Salads

Yipee! Summer is just around the corner. I’m looking forward to long lazy days, family gatherings, and the carefree atmosphere of our home. I stay out of the kitchen as much as possible during the summer, preparing most meals on the grill. I do, however, look forward to the fresh fruits and vegetables of summer and try to incorporate these wonderful goodies into my summer salads. My only rule??? They’ve got to be ‘simple’ to prepare!

Life's a Treasure ~ 'lock it up'

A few years ago I read the novel, "Talk Talk" by T.C. Boyle. Although this novel is an 'extreme' fictional account of identity theft, it scared the 'tinkle' out of me! About the same time, 'that guy (Todd Davis), first appeared on our tv screen with his social security number splashed on the side of an 18-wheeler. I thought he was nuts! All my life I've been told 'don't carry your social security card with you', 'don't give your social security number to anyone', 'be careful with those 9 special digits, they are your identifying numbers'. In other words,"They are MY numbers and they belong to me till death we part!"
So, I did a bit of research. Identity theft was becoming more and more common. Today it is still on the rise and is 'a $50 billion dollar business, and is a main focus of organized crime.' Over 9 million Americans have been victims of Identity Theft. These staggering figures and some of the information below I obtained from www.ftc.gov and from life lock. "Simply put", I have taken the liberty of summarizing the information, thus "keeping it simple, sweetee"!
So, what is identity theft? It's what happens when someone uses your personal identifying information without your permission and without your knowledge, to commit fraud and other crimes. It's serious! While some victims are able to resolve their problems quickly, others spend hundreds of hours, hundreds of dollars, and hundreds of headaches restoring their good name and good credit.
How do these 'bad guys' steal the identiy of unsuspecting, innocent victims? Well, their methods are many. (1) Some 'Dumpster Dive', looking for bills and papers with your identfying information. My advice to you.....shred, shred, shred! Shred everything you might otherwise toss into the trash! (2) Skimming Scoundrels are those who have a 'concealed' storage device that stores your information when processing your card. Like the wonderful waiter at your favorite restaurant, or the checkout girl at your local store....don't be paranoid, just pay attention, or pay with cash! (3) The Phishing Pretenders are those who send you annoying emails, spams, or pop-ups when you're on-line. They appear to be legitimate financial institutions and such, but are merely theives whose goal is to obtain your personal identifying data. (4) The 'Address Changing Cheaters' are those who walk into the post office, fill out a change of address form and have your mail diverted to a different location. (5) Then there are those 'Stealthy Swindlers' who steal your purse, wallet, bills, records and such in order to gain access to your identifying information. (6) Pretexting Tricksters are the thieves who, under false pretenses, try to obtain your information from financial institutions, insurance companies, telephone companies and such.
What do these 'bad guys' do with the information they obtain? Well, there's credit card fraud: they may open a credit card account in your name and go on a spending spree or two, or three, OR, they may change your address and have your monthly bill sent elsewhere, while going on spending splurges all the while. OR, these guys may open new accounts in your name. OR, they just might open a bank account in your name, write bad checks, or if they have your banking information, they may 'clean out' your account. OR, sometimes these guys obtain a drivers license using your name, file tax returns using your name, and maybe they'll use your social security number for some type of government or health benefits. OR, using your personal information, they may rent or buy a house, get a loan, receive medical treatment, using your name, making you responsible for their debt??? OR, heaven forbid, these 'bad guys' may give YOUR name and identifying data if they happen to be arrested! YIKES!!!
What DO I DO??? Well, I'll tell you what we did. My husband, son, and I have 'Life Lock'. It's our way of being pro-active...our way of preventing identity theft before it happens. With 'life lock', we rest better at night because their service is guaranteed up to $1 million dollars. What does 'life lock' do for us? (1) They set up fraud alerts with the credit bureaus; (2) They automatically reset these alerts every 90 days; (3) They remove our names from pre-approved offerings. We receive lots less mail and while that's wonderful, it's also good for the environment; (4) They order free credit reports and these are sent directly to us; (5) If our wallet or purse is stolen, they take care of everything. All we need to do is tell them 'someone's stolen my purse'! (6) They 'shut down' potential ID threats. They contact your if your address has been changed, and alert you when something seems amiss; (7) Their service is guaranteed. If your identity is stolen while a member with 'life lock', they do whatever becomes necessary to restore your good name, your good credit.
Let me tell you how 'life lock' has helped me. Before I was completely aware of all the ways life lock protects my identity, I tried opening an account at Kohl's. It was Christmas. Cash was tight, but more importantly, 'if I opened a credit card account with Kohl's that day, I would receive an extra 15% discount on my current purchase.' I'm thrifty and I wanted that extra discount, so I said 'Sure, I'll open an account.' Well, I was 'DECLINED'! (how embarrassing) A few days later I received a letter and application from Kohl's explaining that someone had tried to open an account with them and because I had life lock, the request was declined. They also enclosed an application for one of their credit cards, if, in fact, it was me who had been trying to open the account. I loved that! Though I didn't receive that 15% discount at check out, I was impressed. However, I immediately shredded the Kohl's application.
One other example I need to share with you! In March I found myself ordering something from a 'seemingly fraudulent website.' To make a long story short, my husband and I both received emails, calls to our cell phones, and a call to our home phone alerting us that this website was known for fraudulent activity. These calls were made to us from our credit card company because of our life lock alerts. With this bit of information, I cancelled the 'free trial', sent emails to the website, and made a few phone calls. In other words, I was able to 'cover my bases' before they scored! AND, I check my credit card statement monthly to ensure that this website doesn't 'steal home' without my knowledge! (hey, it's baseball season)!!
Please, do yourself a favor: Don't put it off any longer! Don't wait and Don't be a victim! Be pro-active! "Lock up your life" and lock it up now. It's one of the best things we've ever done and now, we rest easy because we've lightened our load with Life Lock. Celebrating the Strawberry

Hey! If you live in or near West Virginia, you may want to take a trip to the 68th Annual West Virginia Strawberry Festival, May 13th-17th, 2009, in Buckhannon. The Festival celebrates the strawberry harvest, provides educational and cultural events, and offers plenty of family fun. There are parades, street vendors, arts and crafts vendors, art exhibits, plenty of strawberry short cake offerings, a 'Strawberry Idol' competition, dancing in the streets and much, much more!
Lots of locals and friends of the festival plan to gather at C.J. Maggies American Grill on Friday night, and many will 'meet up' again at The 88 Restaurant on Saturday night. A good time is in store for all who visit the festival. Go to www.wvstrawberryfestival.com for more information.
Because this is the time of year we celebrate the strawberry, let me share some sweet and simple strawberry specifics with you. According to 'webster', strawberries are "the edible fruit of a stemless perennial herb of the rose family." What's more refreshing than a bowl full of strawberries? They're low in calories, (7 medium berries have about 45 calories) and they're naturally sweet. Strawberries contain a large amount of antioxidants which help reduce the potential of heart attack and stroke. They're also high in folate which is key in manufacturing red blood cells. Strawberries are a great source of fiber which seems to help the body absorb nutrients, seems to inhibit the production of cholesterol, and seems to assist in stabilizing blood glucose. When eaten raw, the strawberry is free of saturated fats,free of cholesterol, and free of sodium. So, what's not to love? Plus they're just so yummy good!
I've never known exactly how to store my strawberries once I've purchased them, so I did a little research. First of all, remove them from the store or market container. Place them in a roomier container, with caps in tact, and cover tightly with plastic wrap. Place in 'fridge until ready to prepare for use. DO NOT wash or rinse the berries until you are ready to use them, as the moisture will promote mildew growth. Eat and enjoy these lucious ruby red berries within 4 days of purchase for top-notch taste!
So, 'keep it simple, keep it sweet, and eat more strawberries! :)

Happy Earth Day! Today is the day we celebrate our Earth and renew our efforts for a cleaner, healthier, and more sustainable environment. In April, 1970, we celebrated our first Earth Day, thanks to the efforts of Mr. Gaylord Nelson, then Senator of Wisconsin. During the past 39 years, the leaders of our nation have passed the Clean Air, the Clean Water, and the Endangered Species Acts. With the passage of time, we've come a long way in our quest for a healthier environment for all.
Individually, we need to become more aware of how each can contribute to the preservation of our precious Earth. Below are some 'simple solutions' for living a greener life: |

Buy reusable products.
Use cloth napkins.
Use reusable food containers and reuse baggies.
Instead of using paper or plastic bags when shopping, take your own shopping bags.
Buy and use rechargable batteries.
Turn off the water while brushing your teeth.
Recycle your printer cartridges.
Unplug unused appliances.
Turn lights off when leaving a room.
Set the thermostat in your 'fridge between 36-38 degrees.
Set the thermostat in your freezer between 0-5 degrees.
Use your microwave more and your conventional oven less.
Wash clothing in warm or cold water.
When possible, hang clothing to dry on a clothes-line.
When you dry clothes in your dryer, clean the lint filter after each load.
Use recycled paper.
Recycle aluminum, glass, paper, etc.
Use email.
Sell clothes, furniture and more at a consignment shop or yard sale, or donate to charity.
Buy clothes, furniture, and more at a consignmet shop, thrift store, or antique shop.
Take your own cup or glass to work instead of using disposable ones.
Lower thermostat on your hot water heater to 120 degrees.
Keep your thermostat at 68 degrees in winter and 78 degrees in summer.
Replace or clean air filters once a month.
Plant trees to shade your home.
Use energy efficient appliances and light bulbs.
Join a car pool.
Walk or ride your bicycle ~ drive your car less.
Instead of using pesticides in your garden, plant marigolds to ward off unwanted pests.
NEVER dump anything into a storm drain.
And, Mr. Conard St. Clair suggests using those clear containers that blueberries and
strawberries come in as a 'green house' for starting your new seedlings and plants.

PROMISES, PROMISES

Once upon a sunny summer day in 1971, there were two sisters; one was 19 years old, the other had just turned sixteen. One had her drivers license, the other had her learners permit. Their Father had recently bought a shiny new Camero for their Mother.
On this particular day, their Mother was busy and asked her daughters if they would go to the store for bread and milk. "May we take the new car", they asked in unison? "Yes, if you come straight home," their Mother replied.
And so the argument began. Who was going to drive the shiny new Camero? As it turned out, they compromised. The 16 year old sister promised, "If you let me drive there, I'll let you drive back." So the pact was made. Naturally, the sisters took the 'long way' to the store, parked the car, went in the store, and made the purchase. When they returned to the parking lot, the younger sister had a sudden change of heart. She wanted to drive home and refused to give the car keys to her older sister. Because they were only four 'small town' blocks away from home, the 19 year old sister refused to get in the car and began the short walk home. The younger sister had no choice but to follow suit. As they walked, the sisters were chattering and laughing, in disbelief, at what they were doing.
In a matter of minutes they were home, without the car, without the bread, and without the milk. Their Mother, from whom the sisters inherited their 'stubborn streak', assessed the situation. She took the car keys from the 16 year old, handed them to the nineteen year old, and had both girls walk back to the store to retrieve the car, the bread, and the milk. When they returned home, car priviledges were taken away from both girls for one week.
The sisters and Mother now remember this moment in time with plenty of giggles. The moral of the story: 'When promises are made and then broken, everybody suffers.' The upside of the story: The sisters got some much needed exercise THEN, and it makes for a sweet and simple story NOW! :) |

We are What we Eat?

We’ve all heard the saying, “We are what we eat.” In today’s world of health and research, many discoveries are being made. Simply put, what we choose to eat determines how we look on the outside, and just how well things work on the inside. Though there are many more contributing factors to good health (genes, exercise, habits, stress, environment, etc), the food we eat is an important factor.
Below is a video I received via e-mail, and I’ve decided to share it with you. The video is beautifully presented and has good information. It is just ‘for your information and pleasure’, and I ask that you take from it what you will. For me, 'it's good food for thought." :)

LOVE

Happy Valentine's Day! February is the month we celebrate that 'crazy thing' we call Love! What is it about love that drives us "nuts"??
We simply can't live without it, that's what! Everyone needs love and it really is as simple as that.
It has been said "Love makes the world go 'round." Although most scientists would argue that 'theory', I'm sure they'd come to 'accept' that point of view if we added 'laughter' into the equation. So, in love there is laughter and in laughter there is love. When they go hand in hand, the world certainly does "go 'round".
Laughter really is a vital part of love. Laughter is a display of happiness. It's a sure sign you're having fun. It's a great way to unwind and relieve stress. It's healthy, and best of all, laughter is contagious!!! If I've taught my son anything, I've taught him how important it is to have laughter in his life. I've said to him many times over the years, "Don't be sad, be glad. Don't be mad, be glad. Life is fun and way too short to spend time feeling bad!"
Sure, we all face 'loss in love' at some point in time. Stuff happens. People leave. Life isn't always a 'bouquet full of balloons'. When love hurts, muddle in sorrow, cry a thousand tears, have a little pity-party for yourself. It takes a bit of time to 'get over it' before you're able to move on! It's good to take a little 'time out', to gather your sensibility, to step back and access the situation, but don't dwell in that dark place for long. Life is short and you need to pick yourself up, dust yourself off, and move forward. Learn from these experiences. One of life's greatest challenges is figuring out how to respond in the midst of adversity. How we respond to others and how we conduct ourselves in difficult situations are just two things we learn when love is lost. Remember, when something is broken, it can be mended and transformed into something stronger and more beautiful! When this happens, we will let love 'in' again.
We each have our own 'pre-conceived' notions about love. We define love for ourselves. Whether or not we can verbalize just what 'love is', however, is irrelevant. We just sort of know what it is and how it feels. Love comes to us in many forms. There's patriotic love, puppy love, the unconditional love of a parent, the love of a child, of a sibling, of a friend, of a neighbor, and the romantic love of a mate. Whatever form of love we give and receive, it's all about relationships. All healthy loving relationships involve mutual trust, respect, appreciation, acceptance, and honesty. When we lay our hearts open to love, we are vulnerable to its risks: 'when one leaves us by choice or by death, pain and suffering are inevitable.' When our hearts remain open we invite love and laughter and hope and memory making moments that definitely make the world go 'round.
Valentine's Day is the day we celebrate love. We rush out to find that perfect card or gift for the special people in our lives. We don't need to spend lots of money. Simple and spontaneous acts of kindness will do. Prepare a surprise picnic for someone special, shovel snow from your neighbor's driveway, give a friend a hug, pay for a stranger's lunch, volunteer at a local charity, leave a 'way-to-generous' tip, flash a smile to one who's frowning, or leave a pretty potted plant on someone's doorstep, annonomously! Don't reserve these little acts of kindness for Valentine's Day. We can celebrate love all year long with spontaneous and random acts of kindness, of thoughtfulness ......of love. Once you begin doing these sweet and simple things, you'll find you've been bitten by 'the love bug'! That's a good thing, because having 'the love bug' is contagious. Your heart will be filled with love and gladness and you'll want to 'pass that on' to others.
Just give love and love will come to you!

| My Sister, "Chatty Paty"

Sometimes the thoughtful innocent gestures become the funniest moments in life. My sister, Paty, is pretty chatty. When we get together we smile a lot, talk a lot, and laugh a lot! We enjoy each others company and just have fun.
I started dating a 'guy' in autumn, 1985. A year later we were still dating. I asked Paty if she and her then husband would like to join us for dinner at "Green Acres" to celebrate our one-year anniversary. Paty said, "Yes, we'd love to join the two of you. I'll arrange for a babysitter." I replied, "Great! I'll make reservations for the four of us in my name, and please, Paty, let's keep this 'low key', Okay? My 'boyfriend' isn't one to make a big deal out of things like this." Paty responded, "Okay, no problem!" So I made our reservations in my (maiden) name, "Phillips".
Paty, being the sweet and thoughtful sister she is, called "Green Acres" a few days later and ordered a bottle of Champagne for our table. During that conversation 'Chatty Paty' was asked if we were celebrating a special occasion and she said, "Yes, we're celebrating 'their' one-year anniversary, and I thought the Champagne would be a nice surprise."
We arrived at the restaurant and were escorted to our table. The bottle of Champagne was a wonderful surprise! It was thoughtful, sweet, simple, and very 'low key'! It was great! The four of us had a great meal and enjoyed the Champagne. As we were finishing our dinner, the 'House Band' began playing "Under the Boardwalk"!!! Well, I 'love' to dance and I love that song, so I pulled my 'boyfriend' onto the dance floor. We were the first and only couple dancing at the time, and during a musical interlude the singer says "We'd like to wish "Mr. and Mrs. Phillips", the happy couple on the dance floor, a Happy Anniversary." People applauded! There were cheers of congratulations! ... and the band played on. Oh my gosh, it was sooooo funny~ us, not being married, us, not being Mr. and Mrs. Phillips, us, liking things 'low key'!!! We were laughing hysterically while dancing. I looked over at Paty and she was pretty much falling off her chair in laughter! Because laughter is sooooo very contagious, we could barely contain ourselves. As the music came to an end, we left the dance floor, near tears. Paty and I made a quick exit to the ladies room in a fit of laughter and stayed there until we regained our composure. It took awhile~ I recall sliding down the wall onto the floor in a fit of laughter, trying to talk and laugh simultaneously, and plenty of quizzical stares. It was one delightful moment and a fun little memory my sister and I will always share!
As it turned out, my 'then boyfriend' is now my husband! "Under the Boardwalk" is our song! :)

New Year's Resolutions

AAAAHHH! New Year's Day! The day we celebrate the passage of one year and look toward the new year with bright eyes and hopeful hearts. As 2009 unfolds, we find ourselves filled with anticipation as we prepare to commit ourselves to change or reform some habit or lifestyle; a fresh new opportunity to 'remake' ourselves; a clean blank slate to begin anew.
For some, the resolution made will be a distant memory by months' end. Others, however, will remain focused on achieving the goals at hand. For those who are navigating their way onward, but find themselves a bit 'off course' may need to reflect, re-focus, and re-organize just a bit before moving forward and on-course to the desired destination.
If you find yourself in the last category, STOP! for just a few minutes and ask yourself these questions....and be honest with yourself as you answer them:
>Am I doing this because I NEED to or because I WANT to?
>Is my 'resolution' based on LOGIC or on EMOTION?
>Is my 'resolution' MEANINGFUL to me?
>Am I being myself? Am I ENJOYING the course I'm on?
>Is my 'resolution' too broad? Is it REALISTIC? Do I need to refine it just a bit?
>Am I truly COMMITTED in making the change?
>Am I taking the proper course of ACTION to continue, successfully, on my way?
If you want to make a change, if your resolution is based on emotion, and if you are enjoying the journey, you're on the right course. If you feel your goal is realistic, heartfelt and meaningful, you'll most likely be committed in seeing it through.
The BIG question may be, then, "Are you taking the proper course of action to continue your journey to it's successful end?" This is where an adjustment may need to be made. Let me offer some suggestions to help you along the way.
First, keep things SIMPLE! Don't incorporate unnecessary complications into your life or disaster will quickly appear.
Next, ENJOY the process. Enjoy the changes you are making in your daily routine. Replace the "habit or change to be made" with positive energy, positive emotions, and a positive attitude. Visualize yourself as 'changed' and find yourself fired up and ready to proceed.
COMMIT yourself to the challenge. Action precedes motivation, so when you initiate action, inspiration and motivation will follow. When you initiate action, momentum will increase, changes will occur, and the end result will be in sight.
FOCUS on little successes; conquer one thing at a time; take things day by day! Celebrate your accomplishments and congratulate yourself for a job well done!
On the other hand, if you get 'stuck' somewhere along the way, "forgive your failure!" Make adjustments! Tweak your plan! Determine what's keeping you from achieving your goal. Ask yourself, "What do I need to do to get back on track?" Ask yourself, "How can I strengthen my internal motivation?" AND, remove 'CAN'T' from your vocabulary.
Don't 'beat up' on yourself. And don't be so hard on yourself. Give yourself a break! It takes time to accomplish goals. Deal with setbacks and accept them for what they are. Get back to your plan of action and focus! But giving up is not an option! At times, you may feel like a 'big fat failure', but you're NOT! You are 'sailing' into the unknown equipped with nothing but yourself and your desires. You have no map. So be brave! You are moving out of your comfort zone and that's never easy. Be proud of your courage. Be patient and kind to yourself. AND remember, there really is "no short cut to any place worth going."
So, Good Luck to each of you! I wish you much success in realizing your New Year's resolutions. May you 'keep it simple' and find success!

The Words We Speak

We’ve all heard the saying “sticks and stones may break my bones but words will never hurt me.” Well, let me tell you, “that’s a biggg fattt fibbb!” I know from first hand experience that words do hurt. Like an elephant, I’ll never forget some of the remarks made to me when I was a young ‘chubby girl’. Let me share some examples of words that really ‘hurt my feelings’; words spoken or written to me that I will never-ever forget:
Written in my yearbook:
You are 2 fat Some people I like,
2 be Some people I hate,
4 gotten If I had a figure like yours,
I’d jump in a lake.”
Then there were the sing-songy rhymes:
“Fatty, fatty, 2 by 4, can’t get through the bathroom door.” or
“Fatty, fatty, 2 by 8, can’t get through the front yard gate.”
And, oh yes, the nicknames:
‘fasto’, ‘jellybelly’, ‘fatty’, ‘chunky’, ‘chubs’
and my fun favorite, “Minnesota Fats” (which was lovingly spoken
and thankfully shortened to ‘Minnesota’) :)
And some hurtful comments:
“Why couldn’t you look more like your sister?” and
“You’re just a ‘big’ girl, and you’ll always be a ‘big’ girl.”
Yes, these words are forever engrained in my mind and they’ll never leave me. And, Yes! I have taken these hurtful words to heart. But, luckily for me, my parents were kind and supportive and as a result, I have used these oh so painful words to transform my attitude, not only about my ‘image’ but also about the words I choose to speak to others.
I constantly ‘hear’ the voice of my Mother as she repeated over and again the following phrases:
“If you can’t say something nice, don’t say anything at all.”…and…
“Once you’ve said something, you can never take it back.”
I admit I am a ‘lexophile’, a lover of words. I truly believe the words we speak are a true reflection of what we hold in our hearts and minds, and what we say and how we speak is exactly how the citizens of the world perceive us.
Words are powerful. Words matter. Words convey who we are.
Words spoken by our parents, our siblings, our peers, and yes, even words spoken by the ‘bullies’ of the world can devastate us for a lifetime.
Ugly and negative words can:
Break our heart
Shatter our spirit
Destroy our dreams
Crumple our courage
Diminish our desires
Paralyze our confidence
Ugly and negative words such as ‘freak’, ‘loser’, ‘weirdo’, ‘fatty’, ‘jerk’; OR
Ugly phrases such as ‘You will never be able to do that’; ‘You’ll never succeed’; ‘You can’t’; ‘You’re such a jerk’; ‘You’ll never amount to anything’; ...are just a few examples of ugly and negative words that can haunt one for a lifetime.
On the other hand, words can empower. We can choose the words we speak that can enrich and nurture one for a lifetime.
Such graceful and positive words can :
Give one’s heart a lift
Energize us, elevate us, and motivate us
Comfort us, console us, and inspire us
Boost our spirit and build self confidence
Enrich productivity and nurture creativity
Transform character and foster growth
Promote passion and inspire joy
Lighten our burden and
Encourage hope
Examples of graceful words include 'thanks', 'sweet', 'excellent', 'wonderful', 'brilliant', and 'splendid'.
Examples of graceful phrases include 'Thanks so much', 'You're so kind', 'I appreciate you', 'That's wonderful', and 'You did such a great job'.
These are just a few examples of graceful and positive words that can enrich one for a lifetime.
The power of words really does have an effect on our attitudes as well as on our minds. Words influence our lives as well as our behavior.
Words matter! Words are powerful.
There is a sweet and simple solution in changing the way we speak to others. First, think before we speak. Be careful about what we say and the tone in which we say it. Change the words we use and we change the way we think. Once we change the way we think, we change the way we feel. After changing the way we feel, we change the world around us, making it a better, more desirable place in which to dwell.
The choice belongs to each of us. We can speak words that are hurtful OR we can speak with words that are uplifting. And we can do this one word at a time. To keep it simple, begin with words of kindness. Words of gratitude. |

Have a Happy Meal Tonight

Today finds me in no mood to cook, so tonight it'll be a "happy meal" at our house. No, no, no, not the 'happy meal' from McDonalds, but the 'Happy Meal" by Jen!
At 6:45, the table cloth will cover the table and candles will be lit. I'll set the table for two, using my prettiest plates, cloth napkins, and my favorite wine glasses. As we sit down, the table will be spread with the most delightful offerings: hunks of crusty bread, chunks of Vermont cheddar cheese, slices of apple, clusters of grapes, and a bottle of my favorite red wine.
We'll count our blessings and indulge in our sweet and simple 'happy meal'. Another way to keep life simple! |

All About Apples

With the arrival of autumn we find ourselves enjoying a bountiful harvest of fruits and vegetables, cooler weather, and football. For myself, apples and
Autumn go hand in hand. Breeze into your local farmer's market or produce section of your local grocer and find an expanded spectrum of apple offerings. It's an apple
lovers haven!
Now, while apples are available in such abundance, is a good time to re-aquaint yourself with this healthy, tasty treat. Apples are a great 'grab and go' snack filled with
fiber, which helps to fill you up, not out. They are not only satisfyingly delicious, they are a fresh and natural delight. Apples, when eaten raw, are natural breath
fresheners, massage your gums, clean your teeth, and contribute to your bright dazzling smile. They also have germ fighting properties.
Apples are a food with a function. Apples provide better nutrition to all of us with a sweet tooth, so next time you have a craving for something sweet, "put down that
candy bar"!!! "Reach for Red" or "Go for Green" and grab an apple instead.
According to a study from Penn State University at University Park, "An apple a day can keep weight gain at bay. They are full of antioxidants which may prevent
'metabolic syndrome,' a condition marked by excess belly fat." Also, a recent analysis by The National Health and Nutrition Examination Survey found that
"Americans who consume an apple, a cup of apple juice or applesauce each day are 21% more likely to have a smaller waist and 37% less likely to have high blood
pressure." This same survey also concludes that "those who adopt the 'apple a day habit' are less at risk for health problems related to heart disease and diabetes."
More reasons to indulge in this 'grab and go' snack.
Apples contain no fat, no cholesterol, and are low in calories, making them a healthy and delicious addition to any 'diet'. Embrace the goodness of the apple and
'Chomp like a Champ'!!! Apples help control cravings and satisfy the appetite while restoring the body's supply of necessary vitamins and minerals. Did you know
80% of Americans are not eating 5 servings of fruits and vegetables each day? If this simple statistic is reflective of your daily diet, then add an apple to your list
of 'must have' foods today.
Below are two 'simple' recipes that have apples as a main ingredient. Try one or both of these to help you over the 'not eating enough fruits and veggies' hurdle. One
recipe is for the sandwich connoisseur, while the other is for the 'silly for salad' lover, like me. Enjoy!
"The Happle Sandwich"
Combine the following ingredients into a small dish:
1/2 cup apple butter
2 teaspoons grated or finely chopped onion
1/2 teaspoon dry mustard (or prepared stone ground mustard) the choice is yours
Mix well and set aside.
Sandwich Ingredients:
Slices of Raisin bread, or bread of your choice
Thinly sliced ham (if counting calories, go for low fat, low sodium ham)
Thinly sliced Edam Cheese (or Havarti cheese, Cheddar cheese, or cheese of your choice)
Red Delicious apple (or apple of your choice), cored and sliced into rings
To Assemble:
Spread some of the apple butter mixture over the bread; top with ham, cheese, and apple ring, topping it off with a second slice of bread, OR eat open face.
Enjoy~
"Apple-Spinach-Walnut Salad"
Whisk together the following ingredients for the dressing:
2 teaspoons grainy mustard (or mustard of your choice)
1 teaspoon of honey (or sugar or splenda)
1 shallot, minced
3 Tablespoons of red wine vinegar (or vinegar of your choice)
1/4 cup extra virgin olive oil
salt and pepper to taste
Salad Ingredients:
6 cups of fresh spinach (or other greens), cleaned and spun dry
2 apples of your choosing, cored and sliced into wedges
1/3 cup walnut pieces, toasted
2 oz. goat cheese, crumbled
To serve:
Place spinach onto individual serving plates. Top each with some of the apple wedges, walnut pieces, and a sprinkling of goat cheese. Pass the dressing.
Eat and Enjoy~
So, there they are. I hope you try one or both of these 'sooooo simple' recipes. If nothing else, I hope I've inspired you to rediscover the wonder of apples.
Try them "TNT" (today not tomorrow), and put a bit of pizzazz and crunch back into your daily diet.

Bend and Stretch ~ Extend your Potential

Stretching is good for the body and good for the mind. Stretching, as defined by “jen” is the delicate and gentle act of slowly extending the muscles to full length. Stretching must be done slowly and accurately to avoid strain to the muscles and to reap the benefits of these exercises.
The general purposes of stretching include the following:
- Reduces muscle tension
- Helps improve coordination
- May help improve circulation
- Increases flexibility
- Reduces the possibility of injury
Stretching also allows you to have improved awareness of your body and it just feels so “all over good”!!
When you exercise on a regular basis, (or not) stretching before and after each workout is especially important. Stretching not only prepares your body for activity, but it also improves your performance.
For just a moment, let’s compare stretching to starting your car on a cold snowy day. When it’s 30˚ outside and there’s a foot of snow, you don’t go out to your car, start it and go, do you? No! You start the car, turn on the defroster, clean the windshield and remove the snow and ice from the car. In other words, you ‘prepare’ the car for the trip ahead. Well, stretching before exercise (known as the warm-up) does the same thing. It prepares your body for physical activity. It warms the muscles, gets your blood flowing, and reduces any muscular tightness and/or tension your body may be experiencing.
When done accurately, stretching is done slowly for about 7-10 minutes, before and after exercise. I suggest you begin stretching from your head, working your way down to your toes. Each stretch should be held from 7-15 seconds, and the transition from one stretching exercise to another should be done slowly and deliberately. Please, AVOID bouncing, as this will increase the probability of injury to your muscles.
When stretching is incorporated into your daily workout, you will enjoy greater flexibility and greater freedom of movement. You will also find that stretching after your workout (known as the cool down) will reduce both muscle soreness and muscle/joint stiffness. This cool down period also allows for your heart rate to return slowly and safely to its resting rate.
Simply put, daily stretching keeps muscles supple, frees you from injury, and provides for a safe and healthy transition from inactivity to activity without strain or stress to your body. Increased flexibility and an increase in performance are enhanced as well.
There are many good websites which ‘show and tell’ HOW to do specific stretching activities and WHY. Just “google” stretching exercises and find a website that meets your needs.

Get your Calculator … Ready…Set…Go!

Wouldn’t it be grand if we could just press the delete button and “poof” ………all our unwanted pounds would somehow magically disappear? We live in a fast paced society and often expect immediate gratification. On-line banking, blackberrys, emails, google, drive-thru windows, and the delete button are just a few examples of our ‘we want it now’ lifestyle. Unfortunately, there is no delete button for immediate weight loss, but lets explore some realistic ways to begin the countdown to a ‘lighter~leaner’ you.
First, in order to lose unwanted weight, you must begin by eating smaller portions and decrease your caloric intake. I’m going to share a simple mathematical equation to help you discover just how many calories you should eat per day in order to lose 1 or 2 pounds each week. This equation is based on a medium frame female who is moderately active. It has been determined by nutritionists that such a female burns approximately 10-15 calories per pound of body weight each day. To make the equation simple, I’m using 15 calories per pound. Therefore, a female weighing 150 pounds would burn approximately 2,250 calories each day just to maintain her weight.
So, 150 pounds
X 15 calories per pound of body weight
2,250 calories burned to maintain weight
Now you need to know that 1 pound of fat is equal to 3,500 calories. So, if you weigh 150 pounds and burn 2,250 calories you consume each day with moderate activity, you should maintain your current weight. If you consume more than 2,250 calories each day, you will gain weight.
If, however, you wish to lose weight, you need to ‘cut it down’ a bit. To lose one pound a week, you need to burn an additional 3,500 calories each week, or eat 3,500 less calories each week, or a combination of the two. Here are a few mathematical equations to wrap your brain around in hopes you’ll be better able to determine approximately how many calories you should limit yourself to each day for successful weight loss.
Example: 150 (current body weight)
X15 (calories burned per pound of body weight)
2,250 (calories burned to maintain current weight)
Now, if you wish to lose 1 pound per week, you would divide 3,500 calories by 7 days to determine just how many calories you need to eliminate from you diet each day, or how many extra calories you need to burn daily.
3,500 ÷ 7 = 500 calories less per day
To lose 2 pound per week: 3,500 x 2 = 7,000 ÷ 7 = 1,000 calories less per day
So, for the 150 pound person who wants to lose 1 pound a week:
2,250 – 500 = 1,750 calories allowed daily
For the 150 pound person who wants to lose 2 pounds a week:
2,250 – 1,000=1,250 calories allowed daily to lose 2 pounds a week
To clarify the numbers used above:
3,500 = number of calories in 1 pound of fat;
7 = number of days in each week;
7,000 = number of calories in 2 pounds of fat;
2,250 = number of calories a 150 lb. woman burns daily to
maintain current weight with moderate activity;
HOWEVER, with exercise you can go from ‘moderately’ active to a higher level of activity, thus increasing the number of calories you will burn each day. It has been shown that one-mile of walking or jogging will burn approximately 100 calories. So, for each day you walk 3 miles, you will ‘burn’ about 300 more calories. If your goal is to lose 1 pound each week, walk 3 miles each day and decrease your caloric intake by 200 calories, and that’s 500 calories less per day. By weeks end, 1 pound is lost!
The above is just an approximation or guide to help you make adjustments to your lifestyle. It’s just an overview of how you can juggle exercise with caloric intake in order to make your weight loss plan a simple and healthy one. It is my deep rooted belief that the slower you take those unwanted pounds off, the longer you will keep them at bay.
Everyone’s weight loss goal is to keep unwanted pounds off for a lifetime. To be successful at this, you must always be aware of each and every morsel that goes into your mouth. You must also continue to incorporate exercise into your everyday routine. Once the unwanted pounds are ‘deleted’ from your body, you must continue to eat your fruits and veggies and protein, and still avoid those high fat, high calorie temptations that we seem to enjoy soooo much. If you have a special occasion or a day full of splurges, enjoy the day, but get right back into your healthy eating habits the very next day. It’s about compensation and balance ~ some give and take. If you overeat today, get back to your healthy habits tomorrow. It’s really as simple as that!
Throughout my struggle with weight, I have learned to enjoy exercise and look at it as a privilege and a blessing. I am physically capable and blessed with a body that works. I sometimes take it all for granted and that fills me with guilt, thus getting me out the door on a more regular basis.
I’ve also found it ‘fun’ to see just how many veggies and fruits and other healthy foods I can fit into my daily caloric intake. Go out and get a calorie guide. Look at it daily to determine how many calories are in what you are about to eat. Before long, you’ll be a walking calorie counter, without the need to refer back to the guide.
I know just how easy it is to grab pre-packaged snacks such as chips, twinkies, cookies, and all the good things that tempt us. They tap into our ‘immediate gratification’ or quick fix for something yummy! But these days, there are healthy pre-packaged snacks available in single servings such as carrots, sliced apples, yogurt, fruitcups and such. Go for one of these if you need a quick fix for those munchie-monster moments!
The choice belongs to you. Contemplate the following:
- There is no shortcut for losing weight effectively;
- Lose weight slowly and keep it off longer, perhaps for a lifetime;
- Decrease caloric intake by eating smaller, healthier portions;
- Increase calories burned through daily exercise;
- Balance between calories consumed and calories burned is key.

Life’s Short…..You’ve Gotta have Fun!

Monday evening, as my husband arrived home from work, he was met with a showering of water balloons! It was unexpected and spontaneous, but most of all, it was ‘fun’!
To make ‘the battle’ fair, a box full of water balloons was left by his parking space in the driveway, though, I had twice as many at my disposal. Since ‘Hubs’ is stronger than me and is much better at thowing than I am, I thought that only fair! What ensued were squeals of laughter as two adults, acting like kids, ran around the yard taking aim at one another! I’m sure our neighbors think we’re ‘crazy’, but it’s good for the soul to ‘stay in touch with your inner child’!
Sometimes we need to ‘shake things up’. So often we find ourselves marking time with the doldrums of our lives. We’re busy and consumed with our everyday responsibilities. We do what’s necessary and find ourselves exhausted by day’s end so we fall into bed, only to wake up and do it all over again. Well, that’s no way to live! Be dramatic, be creative, awaken your spirit and take some type of vigorous action! You may not want to do something as goofy or extreme as the water balloon episode, but do something to amaze and astonish those for whom you care!
We only live once, that’s a given, and life is what we make it. Be inventive and make your life ‘one of a kind’. Escape the doldrums of everyday life and re-create your own little world. Clown around; be zany; indulge in a little ‘monkey business’. Just make it fun. Dwell on ways you might make it different and interesting. Life must be satisfying, so create opportunities to make it a bit more gratifying.
There is no formulary for fun. The good thing is, you define ‘fun’ for yourself and only you can fulfill that need for fun. According to Webster “fun is a diversion from what’s serious to that which is light-hearted playfulness.” So stop what you’re doing and find ways to tickle the funny bones of those around you and I promise you, your life will never be the same!
If you want laughter in your life, look for it, create it, indulge in it; laugh until you cry and never-ever apologize for anything that makes you laugh uncontrollably.
My Recipe for Fun:
Awaken your funny bone
Add a Spontaneous Diversion
Sprinkle in some Light-hearted Playfulness
Stir in Lots of Laughter
And the result is FUN!
Break the rules, be young at heart, and live out loud. Don’t hesitate. All we truly have is the here and now. Live life accordingly and have some fun! And, if you “keep it simple”, it’ll be even better! |

Making Salads for Dr. “Hubs”
….simple, healthy, and delicious……

Making salads used to be a chore for me. Chop, chop, chop, dice, dice, dice, then toss, toss, toss! Being married to Dr. “Hubs”, I make salads daily…..he arrives home from a long day’s work to enjoy a simple, healthy meal, which most always includes a salad!!!!
Growing up in the 60’s, my Moma served the same salad over and again,,,, iceberg lettuce with some diced carrots, tomatoes, and cucumbers thrown in and served with the choice of a few bottled dressings. Nothing was wrong with that, but each time salad was served, she had plenty of leftovers and tossed out half-full, outdated bottles of dressing more often than not. I found salads boring!
Eventually, I became “Hubs’s” wife and learned early on that making salad was as much about preparation as it was about pleasure. I can now whip up a salad in no time and actually enjoy the process. It wasn’t always as such. Just after I married “Hubs”, I served him salads just like my Moma served me. He then realized what a rookie I was in the kitchen and introduced me to “semi-homemade” dressings. You know the kind…the dry ingredients come in a little package and you add the vinegar, water, and oil, then shake, shake, shake, and VOILA! A salad dressing that tastes great!
As time passed, we ate in some fine restaurants and I was crazy for salads! Salads, so it seemed, were much better to me when they were made by someone else! But, obsessed as I was, I began the process of observation and experimentation. I would observe not only the ingredients of a salad, but also, the presentation. I would then go home and play in the kitchen, trying this ingredient with that and “Hubs” soon became my somewhat reluctant, but ever so happy “guinea pig”!
I am always on the prowl for a new and different salad. We have a group of friends who try to get together monthly for dinner. These dinners are a group effort. The host and hostess for the evening prepare the main course of the meal. They, in turn, ask others to bring sides such as appetizers, first course, salad, and dessert. We’ve been doing this for years and over time, we’ve each found our own specialty. I am always asked to “bring the salad”! This keeps me on my toes and always in search for a new and exciting twist on salad. I am a salad fanatic!
I have discovered there are no rigid rules in salad preparation. Follow your instincts. Find out what you like and dislike and prepare accordingly. Most salads are “mix-and-match”. Take an ingredient from one recipe and add it to another….don’t like a particular dressing but love the other ingredients? Then choose a different dressing recipe. The choice is yours….Have Fun! Experiment! Indulge!
